Ingredients
- 6 (5 to 6 ounce) center-cut salmon fillets
- 2 tablespoons lemon juice
- 2 tablespoons butter (melted)
- 1/4 teaspoon salt
- 1/8 teaspoon white pepper
- 1 tablespoon butter
- 1 onion (finely chopped)
- 3 cups fresh cranberries
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 cup red currant jelly
- 3/4 cup orange juice
- 2 tablespoons lemon juice
Steps to Make It
- Gather the ingredients.
- Place salmon on a broiler rack that has been sprayed with nonstick cooking spray.
- In a small bowl, combine 2 tablespoons lemon juice, 2 tablespoons melted butter, salt, and pepper. Brush over salmon and set aside.
- In a large saucepan, melt 1 tablespoon butter over medium heat. Add onion; cook and stir until tender, about 6 to 7 minutes.
- Add cranberries, brown sugar, granulated sugar, currant jelly, orange juice, and 2 tablespoons lemon juice to the onion mixture in the saucepan. Bring to a boil over high heat, then reduce heat to low.
- Simmer the sauce for 15 to 20 minutes until cranberries pop and sauce thickens. Remove from heat.
- Preheat broiler.
- Broil salmon 4 to 5 inches from the heat for 8 to 10 minutes, or until fish flakes when a fork is inserted and twisted.
- Serve fish with sauce. Enjoy!
